Ingredients (makes 8):
- Crwst Aberfalls Whisky Caramel
- 1 tbs cocoa powder + 1 tbs sugar
- 200g butter
- 200g dark chocolate 50%
- 4 eggs
- 4 egg yolks
- 100g sugar
- 40g flour

Prepare Fondant Tins:
- Grease the fondant tins with soft butter. -
Create Sugar and Cocoa Mix
- Make a mix of sugar and cocoa powder (1 tablespoon of each)
- Pour the mix into the fondant molds, coating them evenly.
- Chill in the fridge. -
Prepare Cake Mix:
- Melt butter and chocolate together until smooth.
- Meanwhile, whisk egg yolks and sugar until it reaches the ribbon stage.
- Pour melted chocolate into the egg mix and fold.
- Lastly, fold in sifted flour. -
Fill Moulds and Chill:
- Pour the cake mix into the chilled moulds.
- Chill in the fridge for at least a couple of hours or ideally overnight. -
Core and Fill:
- Core out the middle of the fondant cake.
- Spoon in Aber Falls Whisky Caramel.
- Use the sponge that was cored out to patch up the hole. -
Bake and Serve:
- Preheat the oven to 180°C.
- Bake the fondants for 8 minutes and then an additional 2 minutes with the oven door open.
- Take them out, cool for 30 seconds, then tip onto a plate and serve immediately.
